Last year my boyfriend Ben was on this health kick for a while. Once a week for dinner I would marinate chicken with some spices, broil it, and serve it over a salad with lots of cool stuff (i.e. roasted asparagus, blue cheese, walnuts etc…) It is incredibly satisfying and very healthy!

We got back from Mexico early early Sunday morning and all I was craving was a salad (since we couldn’t eat ANY raw veggies while we were there). So Sunday night I made this simple but satisfying dinner!

Salad with Chicken (as Ben calls it)

Marinate thinly sliced chicken breasts for 30 minutes with some olive oil, crushed red pepper flakes, chopped garlic, lemon pepper seasoning and kosher salt. (Don’t drown the chicken, but season it well)

Broil the chicken for 6 minutes on each side or until cooked through.

Slice it and serve over a mixed green salad with cool roasted veggies, dried fruits, nuts etc… – whatever you have in your pantry!
